An annual sweet but tender, spicy flavour which brings out the full flavour of meat dishes. Also useful in fish and tomato dishes in salads. Very popular herb for both seasoning and medicinal purposes

Culture: Sow outdoors in April-May.

This is best sown outdoors in April/May onwards, or into its final container.  Cover the seed well, keep moist and germinate at 15-20oC. Germination should occur in 7-10 days.  The flower petals have a bittersweet salty taste and can be used as a substitute for Saffron in some cooking. 

The petals can be eaten in fresh salads.

Parsley, Plain Leaved also known as French Parsley. Vigorous plants and distinct broad serrated flat leaves that are good flavour and generally regarded to have have a slightly better flavour and texture than curly parsley. Widely grown & used by the continentals also used for bunching but useful for pot cultivation.

This hardy biennial is one of the most popular herbs for culinary use as a garnish, flavouring sauces and pastry, and associating particularly well with fish. With a stronger flavour than curled varieties, this 'Flat-leaved' or 'French' Parsley makes a useful, low maintenance addition to herb gardens, or grow parsley indoors on a bright kitchen windowsill. Height and spread: 45cm (18?).

Sowing & Planting

Soak seed for 30min in warm water to help break down the seed natural germination inhibitors then directly sow parsley seed outdoors from March to July. Grow parsley in a well prepared seedbed in full sun or partial shade. Sow seeds thinly at a depth of 1cm (½in) in drills 30cm apart. Parsley seeds are very slow to germinate taking up to 28 days, especially in wet, cold soils.
Seeds can also be sown indoors or under glass from August to February for fresh leaves all year round. Sow into 7.5cm (3") pots of free-draining seed compost, maintaining a temperature of 18-21C (65-70F) until after germination. When large enough to handle, thin out seedlings to 23cm (9") apart. Gradually acclimatise parsley plants to outdoor conditions over 7 - 10 days before planting outdoors when risk of frost has passed.

Harvesting

10-12 weeks from sowing ? May onwards. September sowings will be April but they will be past it by June, but the spring sowings will then be productive

 

Transplant seedlings when large enough to handle into 7.5cm (3in) pots. Plant in the greenhouse in individual large pots, or 3 plants per growbag when 20cm (8in) high. Can be planted outdoors, 45cm (18in) apart once all frost risk has passed

Sage English as soft blue-green leaves of sage are ideal for adding their rich flavour to meats and stuffing. This hardy sub-shrub is an essential herb for adding to the Sunday roast but also makes an attractive plant in the perennial border. The flavour of the leaves will be best when growing sage in warm, dry conditions. Height: 60cm (24"). Spread: 90cm (36").

English Sage is a good companion plant for cabbage and carrot. Popular Baby Leaf Herb added to mixed salad leaf.

Sow sage from March to May, in pots or trays on the surface of barely moist seed compost and cover seeds with a sprinkling of finely sieved compost. Place in a propagator at 15-20C (59- 68F) until germination, which can be up to 21 days. When seedlings are large enough to handle, transplant into 7.5cm (3") pots and grow on in cooler conditions.

When all risk of frost has passed, gradually acclimatise plants to outdoor conditions over 7 - 10 days before planting outdoors. Plant sage at a distance of 38cm (15") apart on any fertile, free draining, non acidic soil in full sun.

Once established sage requires little attention and copes well with dry conditions. Prune sage plants in spring to encourage new shoots with a strong flavour. Harvest the leaves as and when required once plants are well grown.

Herb ? Thyme English Winter (Thymus vulgaris) also known as Common or Garden Thyme is a hardy evergreen perennial and has small aromatic dark green leaves with clusters of small pale pink flowers.

Sowing:

Sow in March to May or August to September

As the seed are very fine mix some with silver/horticultural sand to make it easier to handle. Sprinkle seed thinly into seed trays but cover the seed very very lightly or not at all. Place ideally in a heated propagator or cover with a polythene bag and keep at 20°C. Germination should occur within 2 weeks.

Transplant in to small pots when large enough. (Thyme can be multi-sown on to a plug tray to avoid the pricking out stage). When thyme plants are about 10cm tall, harden off for 3-4 days & transplant to garden or container when risk of frost has passed. Plant 30cm apart.

Fenugreek (Trigonella foenum-graecum) is an annual plant in the family Fabaceae. The aromatic leaves consisting of three small obovate to oblong leaflets. It is cultivated worldwide as a semiarid crop, and its seeds are a popular pot herb in India. Also used in curry powder in imitation flavorings, & as a coffee substitute. The seeds make a tasty tea. Popular in western Asia and the Mediterranean.

 

Choose a suitable place for planting. Choose a position in full sun and with soil that is of good to rich quality and drains well. The soil should have a pH of around 6.0-7.0 and should remain dry and warm.

  • Avoid cold, wet soils as these will cause fenugreek seeds to rot.
  • As a legume, fenugreek adds nitrogen to the soil, making it useful as a cover crop restoring nitrogen to the soil.

 

Sow the seeds. Decide whether to sow indoors or outdoors. The seed should not be planted outdoors until the soil temperature is around 15ºC/60ºF in springtime.

  • Sow indoors in mid spring or sow outdoors in late spring.
  • The seeds should germinate within 2 days.

 

Harvest the pods when they have ripened. However, be sure to harvest them before they shatter.

  • Seeds can be left in the sun to dry.
