German heirloom with dense, firm drum-shaped heads packed with flavor.

Brunswick is a seldom-encountered German heirloom that dates back to the 18th Century. An excellent late-season variety, the large, 6-9 lb. drum-shaped heads are dense and firm. A favorite choice for homemade sauerkraut. Stores well for long periods.

The Brunswick cabbage variety is a great choice for autumn planting, as it flourishes in cooler temperatures of autumn and winter.

Sowing: May onwards.
Winter Cabbage should be grown in full sun and well-drained, rich, humus soil with a pH of about 6.5. Seeds can be sown either into modules or a seed tray 12mm (½in) deep at 21°C (70°F) all under cover. Germination usually takes 7-12 days to emerge. This is a more reliable method than direct sowing because environmental stresses are more easily managed, watering can be more carefully monitored.

Seedlings are ready for transplanting when they have 5 or 6 leaves. Using a dibber make a hole big enough to accommodate the root ball firming the soil around the plant.

The spacing between plants depends on the end product, for compact heads space at 30cm (12”) & 45cm (18”) for large heads

  • Keep weeds under control during the growing season. Weeds compete with plants for water, space and nutrients, so control them by either cultivating often or use a mulch to prevent their seeds from germinating. Avoid disturbing the soil around the plants when weeding.
  • Keep plants well watered during dry periods to promote rapid, uninterrupted growth.
  • Monitor for pests and diseases. Check with your local Cooperative Extension Service for pest controls recommended for your area. While small, floating row covers will help to keep pests at bay.

Harvesting: November onwards.

Harvest cabbages by cutting close to ground level with a kitchen knife. If you cut a cross on the stump a secondary crop of small cabbages can appear from the cut surface.
