Celery is a cultivated plant, variety in the family Apiaceae, commonly used as a vegetable. Either its stalks, or its hypocotyl, whose stalks are eaten raw, or as an ingredient in salads flavouring in soups, stews, and pot roasts.
Self-blanching types are Slightly quicker to mature and now a mainstay of salad vegetables. Ideal for fresh market sales, long standing crops with high yield.
